Staying in Las Cruces NM can be tough on the diet.  Lots of good New Mexican food!

My weakness since living in the UK has always been really fresh English Toffee.  Stahmann's Pecan makes a great English Toffee and at $20 a pound, it is worth it.  Theirs has really thin strong toffee covered with milk chocolate and crushed fresh pecans.  Really good with coffee!

I polished off my last piece of Stahmann's and wondered, could I make it myself?  So, I searched one of my favorite recipe site, Cooking for Engineers and found a very close recipe that I modified.

What I did to modify it is that instead of the water (10ml), I used 10 ml of Stirrlings Blood Orange Bitters in the boil down.  I then used Scharffenberger 70% cocoa chocolate bits.  In stead of almonds spread lightly over the top, I took a cup and a half of fresh ground pecans.  While the chocolate was hot, I spread the pecans over the top and pressed them into the chocolate.

Net result was 2 pounds of the best toffee I have every had for about $4.00
